Inspired by Elderflower Fields – Margaret

Who was inspired? Margaret – Pancake Queen

What and when inspired you? We were lucky enough to win tickets to Elderflower Fields way back in 2016 and wouldn’t spend our bank holiday weekend anywhere else. A family friend was running the wonderful Jacksons Store horsebox, and my 12-year-old daughter started playing shop. I could barely pull her away to go and do anything else at the festival!

What did you do as a result?

We came up with the idea of creating our own thing that we could take to festivals as a family. Elderflower Fields felt like the perfect starting point, safe in the lovely community that regularly attends. Charlotte and all the festival organisers really supported us, allowing us to try our idea out at the smaller September event Into The Trees. Our mini pancakes were a big hit!

The Little Pancake was born!

Over the years at various festivals, we noticed people with allergies and food intolerances were sometimes overlooked. We developed a recipe using fresh gluten-free ingredients and created a vegan version, too. We created the Little Pancake Place and our little dome in 2019 and have attended Elderflower Fields ever since.

What are you up to now? We have since expanded and provide our little fluffy gluten-free loaded pancakes at various festivals in the South. We are now looking for a trailer to house our little pancakes so we can get out and about to you at even more events. 

Have you inspired anyone?

Actually, it’s my kids who inspire me and gave me the confidence to give this all a go. They were one of the driving forces behind Little Pancake Place, and we are growing the business together. Something I feel lucky to do as a family team.
